(1)鱼皮,买鱼圆是看到老板正在批鱼,问他:鱼皮卖吗,得到肯定的答复后,灵机一动,买了几块,1.50元一斤,回去洗干净,用盐,黄酒抓一抓,晾了一天......

4)起锅上油至7-8成热时放八角,鱼皮,微煎哈,放入适量糖,酱油,辣椒干,姜丝,料酒至均匀上色,添水至淹没鱼皮,水烧开后放辅料,再开后转文火,中途放葱段,滴两滴香醋小火继续,至黄豆酥烂时放蒜末即可出锅。(其实也就是平时红烧鱼的做法)

(6)冷却后的特写。是冬天下酒或佐粥的上好小菜。因为是鱼皮,偶怕腥气,因此料酒生姜下的比红烧鱼要猛些......*b)Aj-DiQ

(8)此菜的好吃程度与麻烦程度成正比啊,我提醒过了大家,别在洗鱼皮时想拿砖砸偶啊,这道冷盘值得推荐啊!

这个做起来复杂,吃起来口感又乱,花生、莲子很难炖烂!不烂的话口感一定极差
