溪鱼煎蛋

在海鲜市场无意中发现有游水溪鱼,通体银白,闪闪发亮,非常吸引。这种鱼在夏季会有饱满的鱼籽,炸酥脆后是下酒佳肴。现正值寒冬,鱼已无籽,但肉厚味鲜,细嫩无刺,用来煎蛋更是突显其特色风味。这次佐以竹叶青,爽就一个字!G"C,F|.h

做法 :溪鱼用少许料酒稍腌,抹干后薄薄的沾一层太白粉。蛋两个打散,加少许盐/白胡椒粉拌均。

两大匙油烧热,摆进溪鱼以中小火两面煎熟;再加入一大匙油,转旺火,倒入蛋液,不翻面煎至凝固,撒上适量蒜白,淋少许红油即可。
